Camping is one of the best ways to relax and enjoy nature with your friends and family. But sometimes, the need to come up with a great meal or drink to serve at the campsite can be overwhelming. Fortunately, you can bring the good times with you—just use the right gear.

June – SAN FRANCISCO – June is National Camping Month, the perfect time to sit around a campfire with friends and family, enjoy great California food and wine, and immerse yourself in nature by sleeping under the stars. Campsites in national parks are already in high demand as summer approaches, but there are still good spots on sites like Hipcamp and Harvest Hosts that offer campsites in vineyards and KOAs. Even pitching a tent in your own backyard can be an adventure.

One of the benefits of camping is sharing delicious meals prepared outside over an open fire, says Aida Mollenkamp of Salt & Wind Travel. While hot dogs and chili are classic options, it’s easy to take camp cuisine to the next level with fresh gourmet dishes and culturally appropriate California wines. It just takes a little planning. The goal of the game is to prepare as much as possible in advance so you can have fun while camping.

Here are Mollencamp’s tips for planning a Wine Institute-inspired camping menu, including simple meals, healthy fruits and vegetables, and your favorite California wines for this summer, found on DiscoverCaliforniaWines.

Planning and preparation

Do the prep work at home. Place the meat in the marinade, cut the vegetables in advance and prepare the sauces and spices in advance. This gives you more time for leisure and entertainment.

Set the accents of taste. Bring your favorite spice blend or special sauce to season various dishes. Italian salsa verde can be used for everything from charcoal-baked potatoes and grilled steaks to sandwich fillings. Similarly, Green Goddess Seasoning from California is a tasty sauce for raw vegetables.

Improve your ingredients. Camping food is instantly refreshed with ingredients such as berries and vegetables from the farm, real maple syrup and artisan chocolate bars.

Wine accordingly. To make your menu authentic and complement the variety of dishes, choose from a selection of California wines. If you are walking to a picnic area and need to carry a light load, transfer the contents of glass bottles into collapsible, airtight wine containers or opt for wines in boxes or cans.

Recipes and wine combinations

The Wine Institute has recipes for simple yet delicious dishes for your next getaway, as well as Mollenkamp’s recommendations for pairing California wines.

  • Grilled shrimp tostadas with corn and tomato salsa, guacamole and lime.
    • The floral aromas, citrus elements and spices of the spicy California Traminer are a perfect match for this fresh and tasty dish. California Sauvignon Blanc is another excellent option.
  • Grilled chicken salad with feta, mint and grilled pita
    • An acidic California Chardonnay or dry sparkling wine is perfect for this Greek-style salad with grilled chicken and a bright lemon vinaigrette.
  • Avocado Burger with Chipotle Mayonnaise
    • Grilled burgers reach new heights with lean beef, spicy chipotle mayo and creamy avocado, all paired with California Cabernet Sauvignon.
  • Grilled watermelon with lettuce and balsamic vinaigrette

    • A sparkling California rosé or a light Grenache rosé is the perfect complement to this sweet and savory dish.
  • Grilled peaches sprinkled with an aged balsamic reduction
    • Grilled peaches are an excellent dessert to cool down a hot summer evening, especially when served with Chardonnay, Viognier or California Chenin Blanc.

    • Camping just wouldn’t be the same without this favorite combination of graham crackers, toasted marshmallows and chocolate (no recipe needed!). Enjoy the hot sweets with a California port, Lodi zinfandel or California sparkling rosé.
